HTCE 5: Sauteed Eggplant

Great dish. Cut eggplant into 1/4 " slices. Add salt, mix with eggplant and drain in a colander at least 30 minutes. Heat butter or olive oil, fry with salt and pepper on medium high until brown, flipping after two minutes, then turn to low and cook 10 mins. Add minced garlic and chives, cook until flavors mix.

I'll start with things other than side dishes soon enough.
