1 cup all-purpose flour, 2/3 cup cold milk, 2/3 cup cold water ,3 large eggs, 1/4 teaspoon salt, 3 tablespoons melted butter.
In a blender mix in the milk and cold water into the flour. Add the eggs, salt and melted butter and blend for about 30 seconds on medium-high. Set aside or in the refrigerator for 1 hour, up to three days.
Heat a non-stick pan on medium. Add 2 to 3 tablespoons of the batter, or to cover in a thin-to-medium thickness layer whatever the size of pan, and cook for 1 to 2 minutes until it is light or golden brown. Flip and cook the other side. Add a filling, from cinnamon sugar to cheese to ham, then roll it up and remove from the pan. Eat it quick, or stack them up and reheat them in an oven.
