HTCE 8: Biscotti

2 1/4 cup flour
1 cup whole almonds toasted
1/2 tsp salt
1/2 tsp orange zest
1 tsp baking soda
1 tsp anise seed

1 cup sugar
3 eggs

Cream the eggs and sugar, until light and fluffly. Add to the mixed dry ingredients, fold in lightly. Form two logs approximately three inches diameter. Bake at 350 F for 25 minutes on parchment paper, then lower temp to 300 F, slice the logs after they've cooled, bake 12 minutes each side until golden brown. They keep a long, long while.
