Man, I've been so into these - eating 1-2/day! I used Bittman's recipe as a jumping-off place. I was inspired by Sally Fallon's Nourishing Traditions cookbook. I'm about to appear rustic.
I made yogurt. It's easy and I don't need anything other than a thermos and a thermometer - I have a shit load of thermi, and we have a thermometer. This is gonna be another post.
I soaked spelt flour in the yogurt - two cups of flour to about 1 1/3 cups yogurt, diluted with water to approximately the viscosity of Dannon. Wait 24 hrs. or more, or less!
I then toasted fennel seeds, ground cardamom with 1 tsp. salt, added 1 tsp. cinnamon, 1 tsp. baking soda to batter. Ground 1-2 tablespoons roasted flax, added to batter. Chopped crystallized ginger, chopped apricots then soaked in hot water, drained, add both to batter. I added about a tablespoon clarified butter, 2 tablespoons agave nectar, two beaten egg yolks, then two whipped egg whites, folded it all together being careful not to overbeat!
Sprayed tins, added about 2/3 up the cup, baked at 350 deg for 15-20 mins.
I'm addicted.
